In My Kitchen Today: Vanilla Almond Cupcakes w/Salted Caramel Buttercream

Yummy! I found THIS RECIPE and just had to make it. Here’s hoping!

They turned out pretty good. The cupcakes aren’t really anything too special. As I say below in my “Notes to Self,” I will try chocolate cake mix and more almond next time. That’s just me, though. I’m a chocolate gal! However, the frosting is FABULOUS! I think I will use it on top of hot chocolate. 🙂

Oh, P.S. This makes a ton of cupcakes and frosting! Make sure you have people to give them to!

I didn’t take a photo of the ingredients for the frosting, but I used the recipe link given above. (vanilla, salted butter, half-and-half instead of heavy cream, homemade caramel, powdered sugar)

NOTES to Self: more almond in batter, maybe chocolate cake mix instead, shorter bake time
